Mezzi Rigatoni Alla Norcina
A flavourful pasta dish made with ground pork. Italian comfort food at its finest!
Ingredients

Mezzi Rigatoni | 1 lb

Extra virgin olive oil, dividedl | 4 tbs

Yellow onion, minced | 1 small

Italian sausage, casing off, no fennel | 12 oz

Dry white wine | 1/3 c

Beef broth | 1 c

Heavy cream | 1 c

Salt and pepper | TT

Romano cheese, grated | 1 c

Black truffle, grated | | 1 tbs

Black truffle butter | 1 tbs
Directions

Place a pot of water to boil, cook pasta according to directions.

Meanwhile in a skillet sauté onion with ½ the olive oil, when it turns translucent add crumbled sausage and brown well, about five minutes.

Deglaze with wine, evaporate well, stir in broth, boil down to half, add heavy cream, season with salt and black pepper, bring to simmer.

Drain pasta and toss with sausage mixture, black truffles and romano cheese. Finish with 1 tbs black truffle butter
