Mezzi Rigatoni Alla Norcina

A flavourful pasta dish made with ground pork. Italian comfort food at its finest!

Ingredients

  • Mezzi Rigatoni  |  1 lb

  • Extra virgin olive oil, dividedl  |  4 tbs

  • Yellow onion, minced  |  1 small 

  • Italian sausage, casing off, no fennel  |  12 oz

  • Dry white wine  |  1/3 c

  • Beef broth |  1 c

  • Heavy cream  |  1 c

  • Salt and pepper  |  TT

  • Romano cheese, grated |  1 c

  • Black truffle, grated  |  | 1 tbs

  • Black truffle butter  |  1 tbs

 

Directions

  • Place a pot of water to boil, cook pasta according to directions.

  • Meanwhile in a skillet sauté onion with ½ the olive oil, when it turns translucent add crumbled sausage and brown well, about five minutes.

  • Deglaze with wine, evaporate well, stir in broth, boil down to half, add heavy cream, season with salt and black pepper, bring to simmer.

  • Drain pasta and toss with sausage mixture, black truffles and romano cheese. Finish with 1 tbs black truffle butter
