Orecchiette with Mussels and Broccoli Sauce, Romano Cheese

Mussels, broccoli, red pepper flakes and orecchiette come together for an easy, light meal.

Ingredients

  • Orecchiette  |  1 box

  • Extra virgin olive oil  |  4 tbs

  • Garlic, chopped  |  1 clove

  • Red pepper flakes  |  TT

  • Mussels  |  2 lb

  • White wine |  2 c

  • Broccoli  |  4 c

  • Romano cheese  |  1/2 c

  • Salt and pepper  |  TT

  • Chopped parsley |  1 tbs

 

Directions

  • Place a pot of water to boil. Meanwhile in another pot sauté garlic and red pepper flakes with 2 tbs olive oil for one minute.

  • Add mussels and wine, cover with a lid and steam until they are all open and cooked, about five minutes.

  • Discard the shells and set aside.

  • Cook pasta according to directions.

  • Add broccoli 2 minutes in, drain and toss with mussels mixture  over high heat.

  • Finish with remaining olive oil and romano cheese before serving.
